Healthy Lentil Soup

Ingredients

3 tbs Oil
2 Onions, chopped
2 tsp Garlic, mashed
8 Celery sticks sliced
2 Large carrots, grated
200g Lentils
8 cups Beef or Chicken stock
1 Bouquet garni (1 bay leave, 2 stems parsley, and 1 stem thyme)
1 tsp2 tsp Fine Cumin     balsamic vinegar*
Freshly grounded black pepper

Directions

Heat oil and simmer onions till soft, add garlic and simmer another minute.
Add celery and carrots and simmer for 3 minutes. Put lid on pot and heat for 3 more minutes to bring forward flavor.
Add lentils and stir fry for 2 minutes. Now add broth, bouquet garni and cumin. Cook slowly for 1-2 Hours.
Remove bouquet garni, add basemic vinegar.
Serve warm.
Tip:  you can replace balsamic vinegar with apple vinegar or dark sherry.
To add more flavor cut a Chorizo sausage in
slices and  fry with onion.
